Here are some menu ideas from our local eateries.      These are only suggestions, and not in order of  preference. We appreciate any meals given to us!

Message from Marce

Hi everyone,

I wanted to let you know that we have some changes in our meal requirements.

We would appreciate it if the meal focus is on the girls and Harvey. It's only three people, we don't need a ton of food.  (You know who you are!)

Important Information

Bringing a meal is a fun an easy way to get involved. Since Marce is easily fatigued, taking a meal for the family a few days a week is highly appreciated and helpful.

Marce is Lactose Intolerant. That means no milk, cheese, butter, sour cream, powdered milk etc. Please read labels on everything that is pre made, from rice mixes, biscuit mixes, gravies, sauces, cornbread mix, frozen dishes, to make sure it does not contain milk, butter, buttermilk, cheese or monosodium glutamate (MSG). You would be surprised how many mixes contain non fat milk or butter. If it only contains whey, that is ok.

Most recipes you can just substitute margarine or soy milk. Cooking with soy milk works great (in baking, just add a little extra baking powder) and non dairy creamer (like the liquid original Coffee-mate) works great in mashed potatoes. While many margarines contain milk, Nucoa does not. Also there is a sour cream substitute and cream cheese substitute called "Better than Sour Cream" and "Better than cream cheese". They substitute great! All these are carried in regular grocery stores! Please refrain from “substitute cheese.” Better to just leave the cheese off of her portion.

What the family has done in the past is when making things like lasagna, enchiladas etc... make a portion without cheese. It does not have to be a separate pan.

The one meat the family all like is chicken, cooked in multiple ways. Whether stir fried, baked, barbequed, fried, in other dishes like enchiladas, salads...

Some of their favorite meals include: chicken, steak, hamburgers, salmon, turkey, the occasional hot dog! White rice, wild grain rice, or rice in the box. Noodles and Potatoes of all kinds. Veggies from Trader Joes that are fresh but in a micro bag - snap peas, squash, yams, broccoli, cauliflower...those are easy. As well as salad.

One thing that doesn't go over very well are large beef portions like roasts, meat loaf, beef stew etc... Pastas are good with separate sauces.

PLEASE: Hold off on the desserts. If you wish to bring it anyways, try to keep it healthy and low fat.
PLEASE: No casseroles.

There will be an ice box on the front porch. There will be a system where the icebox is left open when it's empty and closed when we put the food in it. That way, if Marce pulls in the driveway at some point, after the food has already been dropped off, and sees the box closed, she'll know she needs to bring the food in and it won't sit out for hours.
For the meals that require non-disposable serving pieces, Marce will set them out on the porch (in a box that will remain there) and the person bringing the meal can pick them up at their earliest convenience…preferably the next day.
